طريقة عمل العجينة


المقادير

2 كوب طحين (دقيق)
ربع ملعقة شاي ملح
ثلثي كوب زبدة باردة جدا
من 4 إلى 5 ملاعق طعام ماء مثلج


- المقادير هذه تعمل عجينه باي قطرها 9 انش...اما باي واحدة مغطاة او 2 باي من غير غطاء.

- الباي المثاليه هي التي يكون طعمها حلو و طريه و في نفس الوقت مقرمشه و ذلك يعتمد علي طريقه العجن...

الطريقه:

1. اخلطي الدقيق مع الملح

2. اضيفي الزبدة وتكون باردة جدا من الثلاجه و هذا الشرط ضروري جدا للحصول علي باي مقرمشه و يتم تقطيع الزبدة الي مكعبات

3. كيفيه خلط الزبدة:
الزبدة في عجينه الباي لا تخلط بعنف مثل الكيك تخلط بخفه شديدة حتي تتكون ذرات كبيرة من الزبدة الغلفه بالدقيق و ذلك يتم باستخدام اله مخصصه كما هو باين في الصورة

او يتم الخلط باستخدام السكين

ملاحظة: كل ما قللنا مدة العجن كل ما حصلنا على عجينه طريه


4.اضيفي الماء المثلج:

ابدأي باضافه من 3 الي 4 ملعقه طعام من الماء المثلج و يتم التقليب بالشوكه و بخفه شديدة حتي يختفي الماء فقط ثم زيدي من 1 الي 2 ملعقه طعام ماء مثلج

5. من الممكن عجن العجينه بعجانة الكبة للسهوله...شغلي الكبه حتى تتكون كرة من العجين ثم وقفيها على الفور
بالنسبه للماء...لا تضعي اكثر من 5 ملاعق طعام بأي حال من الاحوال

6.قسمي العجينه الي قسمين و ضعي كل قسم في ورق شفاف

7. اضغطي قليلا علي كل كرة عجين و ضعيها في الثلاجه من 15 الي 30 دقيقه قبل تشكيلها كي نعطي العجينه فرصه حتى تستريح لكي لا تبعد عن اطراف الصينيه اثناء الخبز.

ممكن تجلس يومين في الثلاجه



و هكذانكون خلصنا طريقة العجن و راح اتابع طريقة الفرد..

طريقة فـــــــــرد العجينة


1.التحضير لفرد العجينه:-


سخني الفرن علي 475 فهرنهايت / 240 مئوي.حركي رف الفرن لاسفل وضع ممكن و ذلك لتجنب عدم استواء الباي.


ضعي على رخامه المطبخ قماشه خاصه بالباي اسمها"pastry cloth" و ثبتيها في مكانها بشريط لزق و فائدة هذة القماشه انها تسهل عمليه فرد العجينه و تفادي لصقها في الرخامه



2. انثري حوالي 2 ملعقه طعام من الدقيق علي القماشه و ممكن تزيدي اذا احتجتي.


عند فرد العجينه بالنشابه,القماشه ستمتص الدقيق بدل العجينه


في حاله عدم استخدام القماشه و فرد العجينه علي الرخامه..ستمتص العجينه الدقيق المنثور و قد يسبب ذلك انها تقسي شوي لكن مو كثير

3. اخرجي كرة العجين من النايلون من الثلاجه و ضعيها على منتصف القماشه و انثري دقيق بسيط عليها


- دائما نبدا بفرد العجينه من المنتصف مع الاتجاة ناحيه الاطراف لتخفيف الضغط علي العجينه مع رفع النشابه لاعلي قبل الوصول للاطراف لكي لا نرقق الاطراف كثيرا عن بقيه سمك العجينه

4. افردي عجينه الباي بحيث يكون قطرها اكبر من قطر الصينيه ب 2 انش و يتم ذلك بوضع الصينيه على العجينه و القياس

بالنسبه لسمك العجينه فيجب ان يكون ربع او ثمن انش و كل واحدة و حسب ما تحب.
قيسي السمك عند نقاط مختلفه على قطر الباي لتتأكدي من ان السمك متساوى

يفضل استخدام صينيه قطرها 9 انش مصنوعه من الزجاج او الالمنيوم المطفي

**بالنسبه لصينيه الباي الزجاجيه فهي تمتص الحرارة و تساعد على نضج العجينه في اللحظات الاولى من الخبز


اما اذا استخدمتي الالمنيوم من الضروري الا تكون غامقه كثير او فيها لمعه لان الغامقه جدا تساعد على احتراق العجينه واللي فيها لمعه تعكس الحرارة فيؤدي ذلك الى عدم نضوج العجينه


6. ضعي العجينه في الصينيه و اضغطي عليها بيدك لطرد اي هواء من تحتها

لو حدث اي تشققات في العجينه صلحيها بيدك بالضغط عليها

عجينه الباي فيها نسبه دهون كبيرة فلا نحتاج لدهن الصينيه



7. بعد وضع العجينه من المفروض تكون اكبر من محيط الصينيه ب 1 اانش فنقص الزائد بمقص العجين

ثم قومي بثني الاطراف بيدك و اضغطي عليها خفيفا

9. لو هنسوي العجينه لوحدها بدون اي حشوة لازم نخرمها بالشوكه لاخراج الهواء اثناء الخبز و تفادي تحرك العجينه من اطراف الصينيه اللي بالداخل اثناء الخبز

10. بعد تخريم العجينه..ممكن نضع عليها بعض الاثقال"Pie weights"( و ممكن الاسغناء عنه بالارز او حبات فول او ما شابه ذلك) و ذلك يساعد في تثبيت العجينه اثناء الخبز و قبل وضع الكور نضع قطعه قصدير

وضع الصينيه على اسفل رف من رفوف الفرن يضمن لنا استواء العجينه.

اخبزيها من 8 الي 10 عشر دقيقه او حتي يصبح لونها بني فاتح اتركيها تبرد ثم احشيها ايسكريم,,مارنج,,كريم ه او ما تحبين

11.في حاله وضع حشوة لا تخرمي العجينه بالشوكه

12. ممكن وضع غطاء من القصدير علي الاطراف لمنع احتراقها اثناء الخبز.

لعمل الغطاء :

قصي دائرة من القصدير اكبر من قطر الصينيه.
طبقيها مربع.
قصي مثل الصورة تحصلي علي الطرف.
افتحيه ليصبح غطاء دائري.

طريــقة خبز العجيــــــــــنة


1. بعد الانتهاء من حشو الباي,,ضعيها على اسفل رف في الفرن فذلك يساعدنا على الحصول على باي مقرمشه و مستويه تمام.

2. ممكن نضع غطاء القصدير على الاطراف لحمايتها من الاحتراق

بعض المشــــــــاكل التي قد تواجهك

تحرك الباي من الاطراف (تصغر في الحجم اثناء الخبز) و هذا يحدث لو ما تم خرم العجينه بالشوكه زين (في حاله عدم حشوها).للتخلص من هذه المشكله,,اخرميها عدل و ممكن وضعها في الثلاجه لمدة 30 دقيقه لترتاح قبل الخبز

مشكله اخرى و هي عدم استواء العجينه,,و هذا معناه انها لم تاخذ حقها في الفرن او كانت بعيدة عن الحرارة,,,
لتجنب هذة المشكله نضع الباي على اسفل رف من رفوف الفرن.

الاطراف المحروقه,,مشكله يتم تجنبها بوضع غطاء القصدير.

** نتعلم في الخطوات القادمه كيفية تزيين الباي المغطاة **



- نضع عجينه الباي في صينيه الباي بحيث تكون اكبر من الصينيه بنصف انش و نقص العجين الزائد.

- نفرد كرة العجين الثانيه المستخدمه للغطاء لكرة قطرها 12 انش

- باستخدام قطاعه بسكوت,,نقطع اشكال صغيرة من العجين المفرود.

-غطي الباي بالعجينه المقطع منها الاشكال تم ضعي الاشكال علي الوجه لتصبح جذابه بهذا الشكل

- نضع عجينه الباي في صينيه الباي بحيث تكون اكبر من الصينيه بنصف انش و نقص العجين الزائد.

- باستخدام مسطرة ,,,قصي من العجينه المفرودة 10 شرائح عرض الشريحه الواحدة نصف انش و ضعي خمسه شرائح على الباي بالطول موازييين لبعض و اتركي بينهم مسافات,,,

و هنعطيهم ارقام 1 , 2 , 3 , 4 ,5

- اثني شرائح 2, 4 للخلف لنصف المسافه ثم ضعي شريحه رقم 6 في النصف و بالعرض ثم افردي 2 و 4 عليها.

اثني 1 و 3 و 5 للخلف و ضعي 7 بالعرض على بعد انش من 6 ثم افردي عليها 1 و 3و 5

اثني 2 و 4 و ضعي 8 بال عرض علي بعد انش من 7 و كرري كل ما سبق على الجانب الاخر من الباي

الطريقه

1. سخني الفرن الي 400 فهرنهايت

2. اخلطي 2 كوب دقيق مع 1 ملعقه شاي سكر مع الملح مع ربع ملعقه شاي قرفه و جوزة الطيب في وعاء

3. اضيفي الزبدة و الزبدة النباتيه واخلطي حتى تتكون ذرات كبيرة و اضيفي الماء المثلج.راجعي الكورس

4. قسمي العجينة كرتين ولفيهما بالنايلون و في الثلاجه لمدة 30 دقيقه قبل البدايه في الخبز

5. اخرجي كرة و افرديا الي كرة 12 انش و ضعيا في صينيه باي 9 انش و قصي الزائد حتى تكون اكبر بنصف انش

الحشوة

1. اخلطي كل الحشوة ماعدا التفاح و الزبدة و السكر

2. ضيفي التفاح للحشوة

3. ضعي خليط التفاح على العجينه ثم غطيها كما تعلمنا من الكورس و اعملي 6 فتحات في الغطاء

4. ادهني الوجه بالزبدة و انثري عليها ملعقه السكر

5. غطي الاطراف بالقصدير

6. اخبزيها لمدة 35 دقيقه ثم ارفعي القصدير ثم اخبزيها من 10 الي 20 دقيقه او حتي تحمر الباي

7. اتركيها تبرد ثم قدميها

المقادير [/SIZE]

العجينه

1 كوب دقيق
ثلث كوب سكر
نصف كوب زبدة طريه
ربع ملعقه شاي فانليا

الحشوة

نصف كوب سكر
2 باكيت جبن فيلادلفيا كل واحد 8 اونس
2 بيضه
1 ملعقه شاي فانليا
4 كوب تفاح مبشور
ثلث كوب سكر
نصف ملعقه شاي لكل من قرفه و جوزة الطيب
ربع كوب لوز مبشور

الطريقه

1. سخني الفرن على 375 فهرنهايت

2. اخلطي الدقيق مع ثلث كوب سكر مع الزبدة مع ربع ملعقه شاي فانليا في و عاء

3. اخفقي على سرعه متوسطه حتى تصبح العجينه مثل الكرة حوالي من 2 الي 3 دقائق

4. افردي العجينه في صينيه 20 انش ذات قاعدة متحركه

5. اخلطي نصف كوب سكر مع الجبن مع البيض و ملعقه شاي فانليا و اخفقي على سرعه متوسطه حتى تصبح كالكريمه ثم صبيه على العجينه

6. ضعي التفاح في قدر و انثري عليه ثلث كوب سكر و القرفه و جوزة الطيب ثم ضعي التفاح على الكريمه

7. اخبزيها من 40 الى 45 دقيقه او حتى يستوي التفاح عند اختباره بالشوكه

8. انثرى عليها اللوز ثم ادخليها الفرن لمدة من 5 الي 10 دقائق او حتي يتحمر اللوز

9. اتركيها تبرد
